OK so these Vegetarian "Buffalo Wings" are so bomb they're pretty much better than the real thing lol. They're crispy on the outside and soft on the inside. They look and taste like the real thing, its crazy! Also, this recipe could also be Vegan, I will note what needs to be replaced through-out the recipe! They honestly are too good not to share, my mouth is watering all over again just typing out the recipe, so lets get to it!

Ingredients For "wings": 1/2 Cauliflower Head 1/2 cup All Purpose Flour 1/2 cup Milk (for vegan: replace with water, soy milk or almond milk) 1/2 tsp Salt 1/2 tsp Cumin 2 tsp Paprika 1 tsp Garlic Powder Vegetable Cooking Oil
For Sauce: 1/4 cup Franks Red Hot Sauce 1/4 cup Butter - melted 1 tsp Worcestershire Sauce
Optional: Ranch or Bleu Cheese (or your fav vegan ranch/bleu cheese dips)

So I've finally perfected MY own Chocolate Chip Cookie recipe for a small batch. For years I've made chocolate chip cookies and seen a billion and a half recipes, but some are too thick, too crunchy, too cake-like, or too something just not to my liking. This recipe makes thinner, super soft and chewy in the center but just the right amount of crispy on the bottom and not too many, just the perfect amount for 6 or 8 cookies. PERF.

I'm officially 20 weeks and some days! And that means I'm half way! This pregnancy is actually flying by pretty fast now that all the sickness, headaches and all that subsided. My belly is showing-showing now, so I don't just look bloated lol. Starting to feel real kicks and everything, and its hitting me that there is a living, growing human in there again, AHHH. I tell Jeff all the time that it really feels like an alien in there just growing and moving, like a parasite eating all your food making you hungry constantly, lol. 
All jokes aside, I'm grateful that I can grow a little human being in me. Its so wild to think that's what I'm really doing. Women are so amazing, look at us growing humans! Sacrificing our bodies and going through all the hardships of pregnancy, to bring another life into existence. With my back and excrutiating pelvic pain, all the sickness, headaches, body changes, all that to bring a human into the world. WILD.

First of all I need to say, I LOVE eggplant, its my favorite food lol. I've loved any dish I try with eggplant in it. So today I'm sharing my Eggplant Lumpia Recipe for all my eggplant lovers and vegetarians out there. Who said you couldn't be vegetarian and not still enjoy the comfort of Lumpia haha. 1 Large Chinese Eggplant
1 Egg - Scrambled
